This is an amazing recipe for kids and adults alike. It is completely grain free and full of healthy fats and protein. Please make sure that when incorporating xylitol in any recipe to keep it well away from your pets. Xylitol is extremely toxic to animals.
1 cup cooked Gem Squash - scape out the seeds and use only the flesh.
1/2 cup unsweetened almond or macadamia butter
4 whole eggs
1/2 tsp Vanilla essence
1/4 tsp Salt
Coconut oil or butter for cooking)
Place the gem squash, nut butter, salt, vanilla and eggs in a food processor or blender.
Process until the mixture resembles pancake batter.
Warm a pan and melt the fat.
Pour a 1/4 cup of batter into the pan.
Cook for around 2 minutes per side - the cooking times may vary depending on your stove.
Serve with natural maple syrup or xylitol syrup
