Apple Pie Mug Cake

Who would have guessed that a “Mug Cake” could actually be a healthy meal and a perfect craving buster. This recipe makes enough for one serving.


  • 2 tsp oat flour

  • 2 tsp rice flour or spelt flour

  • 1/2 tsp fresh lemon zest

  • 1/2 tsp lemon juice

  • 1/4 tsp cinnamon powder

  • 2 tsp Erithritol or stevia powder

  • 1/2 Apple with skin on

  • Pinch of salt

  • 1 Egg

  • 2 TBSP milk or milk substitute

  • 1 TBSP Full fat Greek yoghurt


  1. In a blender or Nutribullet, combine chopped apple, lemon zest, lemon juice, egg, milk and sweetener of choice. Blend for 5 seconds.

  2. In a large, microwavable mug, mix the flours, baking powder and cinnamon.

  3. Pour the apple mixture into the mug and stir until smooth.

  4. Microwave at 900W for 30 seconds. Check that the cake has not overflowed the top of the mug.

  5. Cook for a further 30 seconds.

  6. Top with an optional dollop of Greek yoghurt and a sprinkle of cinnamon.
