Who doesn't love carrot cake? In this mug cake recipe we turn an all time favourite dessert into a healthy meal that nails cravings.
2 tsp oat flour
2 tsp rice flour or spelt flour
1/2 tsp fresh lemon or orange zest
A pinch of cinnamon powder
A pinch of nutmeg
2 tsp Erithritol or stevia powder
1 TBSP finely grated carrot
3 Pecan nuts finely chopped
Pinch of salt
2 TBSP milk or milk substitute
1 TBSP Full fat Cream Cheese
In a blender or Nutribullet, combine zest, egg, milk and sweetener of choice. Blend for 5 seconds.
In a large, microwavable mug, mix the flours, baking powder, pecan nuts, salt, nutmeg, grated carrot and cinnamon.
Combine the dry and wet ingredients.
Microwave at 900W for 30 seconds. Check that the cake has not overflowed the top of the mug.
Cook for a further 30 seconds.
Blend the cream cheese with a dash of stevia and lemon zest for flavour and use this to one your mug cake once cooled.
Garnish with pecan nuts and cinnamon.
