Energy Bars

Home made energy bars are a great way to keep your energy stable if you are going hiking, need a whole food snack during a race or have active kids and want to give them an energy boosting treat with actual health benefits. Energy bars are not a great idea if you have insulin resistance or are trying to lose body fat because even thought the ingredients are made from whole foods, honey or maple syrup are energy dense but you can leave them out altogether. If you have digestive issues you can try soaking the seeds, nuts and oats in water overnight. Dry them out in an oven at a low temperature and them make the bars.





Ingredients


1/4 Cup coconut flakes

  • 1/4 Cup mixed seeds

  • 1/4 Cup mixed nuts

  • 1/2 Cup whole rolled oats

  • 1/2 tsp sea salt

  • 1/2 tsp vanila extract

  • 1/2 Cup whey protein powder

  • 1/4 Cup almond butter

  • 1/2 Cup Coconut Oil

  • 1/4 Cup honey or maple syrup

Method

  1. In a blender or NutriBullet, grind the seeds, nuts, coconut and oats to a rough powder.

  2. In a saucepan, warm the almond butter, coconut oil and honey or maple syrup until melted and warm - do not boil.

  3. Combine everything together with the whey powder in a large bowl until thoroughly mixed.

  4. Line a small baking pan with baking paper.

  5. Pour in the mixture and spread evenly.

  6. Place int eh fridge for 2-3 hours until set.

  7. Slice into bars and wrap individually in wax paper.

  8. Keep in a cool place - they can melt on hot days!
