Tzaiki is a traditional Middle Eastern dish that pairs well with anything you can imagine. With naturally healthy ingredients tzaziki is quick and easy to make, even if you aren’t a cook.
500ml Double Cream Greek Yoghurt
1 Large Cucumber - finely sliced on a mandolin, or grated
1 TBSP Sea Salt
2 TBSP Extra Virgin Olive Oil
2 TBSP Lemond Juice, freshly squeezed
1 Clove Garlic, crushed
1 TBSP Mint Leaves, chopped
Slice or grate the cucumber and mix well with the salt.
Place in a colander with a large bowl underneath to catch the water and place a stack of side-plates directly on top of the cucumber to help squeeze out the water.
Leave in the fridge for 3 hours.
Discard the water and combine the cucumber, yoghurt, olive oil lemon juice, garlic, black pepper and mint in a large bowl.
Mix gently to combine all of the ingredients.
