You can subtly infuse any good quality olive oil with a range of herbs and /or garlic to add that extra pizazz to your dressings and sauces.
Garlic Oil
Ingredients
300ml Good quality virgin olive oil
2 Cloves fresh garlic, peeled
Method
Pour the olive oil into a clean, dry glass jar.
Add the garlic cloves.
Cover and store in a dark cupboard - olive oil is light sensitive and lasts longer when stored in a dark space.
The garlic will have infused within 24 hours.
If garlic turns brown discard.
Herb Oil Infusions
Ingredients
300ml Good quality virgin olive oil
1 Stem fresh rosemary OR
5 Stems Fresh Oreganum / Thyme / Tarragon
Method
Pour the olive oil into a clean, dry glass jar.
Add the herb of your choice
Cover and store in a dark cupboard
The herb oils will have infused within 24 hours.
This is fabulous for roasting meat or adding to dressings and sauces.
