Salad dressings found in most retail food stores are full of preservatives, thickeners and sugars. These home made dressings can be kept for up to a week in the fridge. There really is no need for salads to be boring, so try a new dressing every day with a variety of fresh and colourful ingredients.
Basic Vinaigrette
Ingredients
1/4 Cup good quality olive oil
1 TBSP Balsamic vinegar
Pinch of sea salt or Herbamare
Freshly ground black pepper
Method
Add all ingredients to a clean, dry glass jar and shake vigorously.
Store in the fridge for up to a week.
Honey Poppy Seed
Ingredients
1/4 Cup good quality olive oil
1 tsp poppy seeds
3 TBSP white wine vinegar
1 TBSP honey

Add all ingredients to a clean, dry glass jar and shake vigorously.
Store in the fridge for up to a week.
Thai Salad Dressing / Marinade
Ingredients
1/4 Cup good quality olive oil
4 TBSP rice vinegar
1 TBSP honey
1 tsp grated fresh ginger
2 TBSP sesame oil
1 TBSP Soy sauce or Braggs Amino Acids
1 tsp toasted sesame seeds
Method
Add all ingredients to a clean, dry glass jar and shake vigorously.
Store in the fridge for up to a week.
As a marinade you can pour over raw chicken, fish or red meat and leave to infuse overnight, before cooking.
Blue Cheese Dressing / Dip
Ingredients
1/4 Cup good quality olive oil
1/4 cup cultured butter milk
1/4 cup plain organic yoghurt
1/2 cup crumbled blue cheese
The juice of 1/2 a lemon or a whole lime
Zest from 1/2 a lemon or a whole lime
1 TBSP honey
Method
Add all ingredients to a clean, dry glass jar and shake vigorously.
Store in the fridge for up to a week.
