This is really cool and fresh with a zing of flavour. A great way to bring new flavours into your healthy food choices.
Ingredients
1 English cucumber, finely sliced or shredded
1 Cup sea Salt
1 Bunch coriander, chopped
2 tsp toasted sesame seeds
1 Fresh Lime, Juiced and zested
1/4 tsp dried chilli flakes
1 tsp grated ginger 1 TBSP Soy sauce or Braggs Aminos
1 TBSP Sesame oil
1 TBSP Olive oil
Method
Slice or shred the cucumber.
Place in a large colander and combine with the sea salt.
Place 5 dinner plates on top of the cucumber to create a compress and gently squeeze out the water.
Place the weighted colander in the fridge with a bowl underneath to catch the water.
In the mean time make the dressing by combining the lime juice, zest, chilli, ginger, soy sauce and oils in a bowl and whisking thoroughly.
After 2 to 3 hours, remove the cucumber and rinse off the salt with fresh water.
Combine the cucumber, dressing, coriander and sesame seeds in a mixing bowl and gently mix.
