Nothing is easier to make than a tuna salad and it doesn't have to be dry and boring.
INGREDIENTS
1 Tin tuna in salt water, drained
1 Tomato, chopped
1 Cup English cucumber, chopped
1/2 Red onion, chopped
1 TBSP Mayonnaise (low or no sugar mayo preferably)
1 TBSP Full fat plain yoghurt
1 TBSP virgin olive oil
Salt and pepper
METHOD
Combine all ingredients in a large bowl and mix well. Serve on a bed of lettuce leaves or in a veggie wrap.
Garnish with fresh herbs.
