Apple Cinnamon Muffins


  • 2 Cups whole rolled oats

  • 1 Large Granny Smith apple, diced

  • 2 Scoops vanilla whey protein powder

  • 2 TBSP raisins or sultanas

  • 3 Whole eggs, beaten

  • 2 tsps baking powder

  • 1 tsp cinnamon powder

  • 1/4 tsp sea salt


  1. Pre-heat oven to 180 degrees celsius

  2. Prepare a muffin pan with greased muffin liners (paper or silicone)

  3. Place the diced apple on a bowl and microwave with 2 TBSP water for a minute to soften.

  4. Process the oats in a blender or food processor until it resembles a rough flour.

  5. Add the softened apple and process again until well combined.

  6. Pour the mixture into a large bowl.

  7. Stir in the eggs, whey powder, baking powder, salt, cinnamon and raisins.

  8. Bake for 30 to 40 minutes.
