Grain Free Nut Muffins

This recipe makes enough for 12 servings.


1/2 Cup raw macadamias 1/2 Cup raw almonds 1/2 Cup raw hazel nuts 1/2 Cup mixed raw seeds

1 TBSP chia seeds

1/2 Cup coconut flakes chopped

10 pitted dates

1/2 tsp sea salt 2 tsp baking powder 1 tsp vanilla extract 2 large bananas 3 whole eggs


In a food processor or blender, process the nuts, seeds, dates, salt, baking powder and coconut until you have created the consistency of a heavy flour.

Empty the contents into a large bowl.

Now blend the banana, the eggs and vanilla extract unltil completely liquidised.

Add to the flour and mix until completely combined.

Grease a muffin pan - not too large, the muffins should be a standard cupcake size.

Add just enough muffin dough so there is enough place for the muffins to rise.

Bake at 180 for 20 minutes. Once baked, leave to cool on a wire rack.​   Tel:  010 597 0850
