Crustless quiches are an amazing early morning time saver and need never become boring as you can add so many different kinds of fillings. High in protein and healthy fats.
6 large eggs, beaten
1 Tablespoon unsalted butter, or coconut oil
Salt and pepper as required
Filling Ingredient Options
1/4 cup chopped spring onions
1 cup chopped celery
1/2 cup chopped sweet peppers
1/2 Cup crumbled feta cheese
Bacon, cooked and diced
1 Chopped tomato, raw or cooked
Baby spinach leaves
Preheat the oven to 200C.
Grease a large muffin pan with melted coconut oil or butter.
Combine the beaten eggs, salt, pepper and a combination of the filling ingredients.
You may want to separate the egg mixture and use different fillings for each compartment.
Place filled muffin tray in the oven for around 15 minutes.
Check if cooked through, if not return to the oven for a further 5 minutes.
May be stored in the fridge for up to three days.
