Legumes such as chickpeas and lentils are one of the highest fibre containing foods one can eat. Particularly beneficial if you are looking for foods that lower LDL cholesterol.
Ingredients
1 tin chickpeas (Garbanzo beans), rinsed and drained
1 tin lentils, rinsed and drained 1/2 cup pitted black olives, chopped
2 sticks of celery chopped 1 red onion finely chopped 1 red pepper, finely chopped 1 clove garlic, crushed 2 TBSP fresh basil, finely chopped 2 TBSP fresh parsley, finely chopped 2 TBSP red wine vinegar 3 TBSP extra-virgin olive oil Salt and freshly ground black pepper - to your taste preference.
Method
Combine chickpeas and lentils with onions, peppers, olives, celery, garlic, basil and parsley in a medium bowl. Dress salad with vinegar and oil, salt and pepper and toss well.
