Crunchy Chickpea and Lentil Salad

Legumes such as chickpeas and lentils are one of the highest fibre containing foods one can eat. Particularly beneficial if you are looking for foods that lower LDL cholesterol. 


1 tin chickpeas (Garbanzo beans), rinsed and drained

1 tin lentils, rinsed and drained 1/2 cup pitted black olives, chopped

2 sticks of celery chopped 1 red onion finely chopped 1  red pepper, finely chopped 1 clove garlic, crushed 2 TBSP fresh basil, finely chopped 2 TBSP fresh parsley, finely chopped 2 TBSP red wine vinegar 3 TBSP extra-virgin olive oil Salt and freshly ground black pepper - to your taste preference.


Combine chickpeas and lentils with onions, peppers, olives, celery, garlic, basil and parsley in a medium bowl.  Dress salad with vinegar and oil, salt and pepper and toss well.​   Tel:  010 597 0850
