Bromelaine is an enzyme naturally found in pineapple. It is used as an anti-inflammatory agent and is a very effective digestive enzyme. Specifically to assist breaking down proteins.
Makes 4 Servings.
4 Grilled chicken breast fillets - shredded
1 Small pineapple - chopped
1 Large avocado, chopped
1/2 Tsp Dijon Mustard
1/2 Cup Banting or home-made mayonnaise
1/2 Cup full fat plain organic yoghurt
1 TBSP olive oil
2 TBSP spring onions, chopped
Handfull of micro-greens (optional)
Place chicken and chopped pineapple and avocado in a large bowl.
In a separate container blend the mayonnaise, yoghurt, mustard and olive oil.
Add salt, pepper and spring onions.
Mix everything together until well combined. Garnish with micro-greens and serve.
