Baked Chicken with chorizo

Dishes that taste even better the day after and make excellent leftovers are essential when trying to avoid random eating choices. This is a dish the entire family will love.


100g Chorizo sausage, sliced

6 Free-range or organic chicken breasts on the bone.

1 large red sweet pepper, sliced and seeds removed.

1 Tin cannellini beans, drained and rinsed

6 ripe tomatoes, chopped

2 garlic cloves, crushed

1 TBSP fresh rosemary, finely chopped

1 tsp dried tarragon

3 TBSP olive or coconut oil

Sea salt and freshly ground black pepper


  1. Preheat the oven to 200C.

  2. Place everything in a large roasting pan and toss until everything is well coated.

  3. Bake for 45 minutes, or until the chicken is thoroughly cooked.

  4. Serve with a green salad or steamed green beans drizzled with butter.
