2 cups rolled oats
¼ cup pecans
1 tsp baking powder
1 tsp cinnamon
1 tsp salt
⅓ cup erythritol powder / granules
1 tin coconut milk
½ tbsp vanilla extract
2 tbsp melted coconut oil
2 cups frozen mixed berries
Preheat oven to 180 degrees celsius
Mix together oats, baking powder, cinnamon, pecans, salt, and erythritol powder.
In a separate bowl, combine the coconut milk, eggs, vanilla and coconut oil.
In a greased baking dish, layer half the berries.
Then add a layer of the dry oat mixture, followed by the wet mixture.
Finally add the rest of the berries on top along with the roughly chopped pecans.
Bake for 45 minutes, serve warm or cooled.
